Cavalry can't use siege engines to climb walls, as far as I am aware (although, to be honest, I've never seen it tried). But can engines carried by cavalry be utilised by others in the army (adding to the total number of engines at the walls that can be climbed or squeezed through by infantry units) and do they count when calculating damage done to the walls each turn?

afaik, they can carry them and use them. Just not as well.
That being said, the opportunities to actually siege enemy cities are rather rare, so I don't really recall.
Calvary cannot use siege engines to climb the walls. "The horses canter about helplessly in front of the walls" is the flavor text, if I remember.
and then it goes... they ride through the gaps or whatever after some engines knock the defences down a bit
I honestly don't know if the engines carried by cav would be used yb the infantry. My gut instinct is yes. SEs are, I think , basically community property on the front lines. I've seen undead units borrowing the attackers siege engines.
The "breaches" that the cavalry ride through are not SEs. The SEs make them. Your cav do not need access to those SEs to ride through the breacjes.
If I remember correctly any siege engines that units taking part in the assault have with them are all communally used by the infantry, as while only taken part in one city assault since joining Zonasa, I must have done it well over a dozen times while leading a cav unit during the great war as a member of Sol and I'm sure that's how it worked out.

Only SEs actually at the wall get used. And cavalry doesn't close in on the walls until they are breached, so for the most part, SEs carried by cav would be useless, except during some protracted sieges.
