What's the difference between a guildhouse and a secret society? Thanks!

A guild can have guildhouses. They are public. If you travel to a region, you can see the guildhouses that are built there. You can join up if you enter the house.
Secret societies also have guildhouses, but are secret. You don't see them popping up in the region if you're not part of the secret society.
The only way to get in is for an Elder member to invite you whenever you are both in a region where a guildhouse of said Secret Society is. From that moment, you will get the link popping up to visit secret society guildhouse whenever you see one.
For the rest, it works the exact same way. Ranks, guild boards, members, treasuries,..
EDIT: You don't get to see all the members in a secret society either. As a full member, you can see who are aspirants, as an Elder, you can see who are full members. That kind of thing. Don't know the exact details. If they send letters to the Secret Society group, you do have their names though.

I thought name for sent messages in a secret society were under pseudonyms/pennames? I'm pretty sure secret society chatter was anonymous, but it's been years.

No, they are not pseudonyms/pennames.
Only places where you send anonymous messages is when you're in prison & yelling to others or in the Underground (as a rebel). I can't think of any other place.

Be a lord
Be in your region
Go to Command > Economy
Find the 'Found a new Guild or enlarge guildhouses'
Choose type 'Secret Society'
