Can Vice-Marshals override Marshals if the VM knows more Formations? My VM changing his settings reset mine to "No formation", and in battle, even though I took control, I used the formation the VM set, which my Marshal didn't even know.

Why not?  Your VM could very well help your Marshal.  It could be viewed as a benefit to having a capable VM.
