I notice takeovers are kind of boring. Balanced takeovers are unheard of. It basically amounts to either several turns of freedom celebrations or several turns of random violence. Its not particularly realistic either. Sure a town or city could be monolithically friendly or opposed to your realm, but more likely some areas will have one political slant and some will have another.

What if we were to make estates a more integral part of takeovers. You give the different estates of a region different loyalty and control values there are a lot of ways they could be determined. Then in the takeover window you select not just the type of activity but also the estate you target.

And here's another fun idea. If you're a landless noble and you help takeover an estate, you can be declared its knight.
